It's no secret that I love to cook. I usually make all our dinners from scratch, using only fresh ingredients. Thing is, we all know how much of a time commitment that can be. These days, with the wedding just a month away, I find myself wishing for another 8 hours in the day and leaving the cooking to Ben. (Thanks for stepping in, Babe!)
I've always been of the mindset that preparing a fresh dinner from scratch involves a 1-2 hour time commitment so when I was asked by McCormick to give one of their most popular recipes, Baja Fish Tacos, I was a little hesitant. But when I actually read the ingredients and directions, with a 15 min prep time and 10 min cook time – I was intrigued! I've actually never tried making fish tacos at home and Ben has been suggesting that we try to incorporate more fish in our dinner routine.
I created our meal EXACTLY like the recipe states, but if I had it to do over again, I would grill the fish instead of fry it in oil. Also note that these exact ingredient measurements make for a VERY spicy crust. Not that spicy in MY world, but for the average person, probably too much. (I chose not to give this to my 3 year old son because of the level of spice).
