Weeknight Dinner Cheat: Easy Spicy Tilapia Fish Tacos Recipe

It's no secret that I love to cook. I usually make all our dinners from scratch, using only fresh ingredients. Thing is, we all know how much of a time commitment that can be. These days, with the wedding just a month away, I find myself wishing for another 8 hours in the day and leaving the cooking to Ben. (Thanks for stepping in, Babe!)

I've always been of the mindset that preparing a fresh dinner from scratch involves a 1-2 hour time commitment so when I was asked by McCormick to give one of their most popular recipes, Baja Fish Tacos, I was a little hesitant. But when I actually read the ingredients and directions, with a 15 min prep time and 10 min cook time – I was intrigued! I've actually never tried making fish tacos at home and Ben has been suggesting that we try to incorporate more fish in our dinner routine.

I made this over the weekend and can confirm – this is a great tasting recipe that really is QUICK and EASY. I love that you buy deli coleslaw and simple mixed in fresh chopped cilantro. When Ben stopped in to “check in” on my cooking (as he often does to steal nibbles here and there), he commented on the slaw mixture – “WOW, this is good!” Even though he is NOT a fan of cole slaw, I have a feeling this will be a new addition to our array of sides when preparing mexican style meals.

I created our meal EXACTLY like the recipe states, but if I had it to do over again, I would grill the fish instead of fry it in oil. Also note that these exact ingredient measurements make for a VERY spicy crust. Not that spicy in MY world, but for the average person, probably too much. (I chose not to give this to my 3 year old son because of the level of spice).

    My favorite McCormick spice is the garlic powder. We often use garlic powder on our meats, especially London Broil.

    My favorite spice is Salad Supreme. I use it when I make any kind of salad but especially when I make pasta salad. It gives it that extra special taste
