Summer is here and we’ve been firing up the grill just about every night this week – spicy thai lobster, bacon wrapped shrimp and asparagus, cinnamon pineapple, garlic green beans, pizza, you name it – we like to grill it. While we love getting creative with our BBQ meals, we also have our favorite go to classics. After seeing this Knorr Grilled Steak and Summer Vegetable Rice Recipe on Vons’ Make More of Mealtime and Summer Grilling page, I was inspired to create my own perfect cowboy steak.

We usually pair a fresh green salad made from our backyard garden with steak, but depending on how stressful the day or week has gone, sometimes we crave a more hearty side and it’s difficult to beat warm, cheesy risotto and grilled veggies with a perfectly grilled juicy steak. My mouth is watering just thinking about it. With unconventional ingredients like coffee and honey, this exquisite steak rub will be your new secret weapon for impressing dinner guests, I promise!

Perfect Cowboy Steak and Roasted Veggies with Four Cheese Risotto

1 pound ribeye cut (we love grass fed meats from Butcher Box!)
1 tablespoon ground coffee
1 teaspoon raw honey
salt and pepper to preference
fresh thyme
root vegetables to roast (we did a mix of carrots, beets and sweet potatoes)
1 package of Knorr Four Cheese Risotto

Directions

Heat your grill to about 450 degrees
Wash, peel and chop the vegetables and put on the grill in a cast iron skillet. Stir whenever you turn and check the meat.
Rub the honey, ground coffee, salt, pepper and thyme into the meat while the grill warms up.

Put the ribeye on the hot grill and cook each side for about 2 minutes, including the edges.
Then use a meat thermometer to cook the meat to your preference.
As soon as you remove the meat from the grill cover with foil and then start cooking your Knorr side to the package instructions.
