3-4piecescrispy bacon, crumbled
1pre made puff pastry sheettypically in the freezer section
½cupfresh spinachwe had more for salads with the pastries
¼cupshredded cheese
dashHimalayan salt
thyme, fresh
optional: a few drops per pastry of pure maple syrup
Instructions
Cut the (thawed) pastry sheet into six pieces. Then use the tip of the knife to cut a smaller rectangle about ½ an inch in from the edges. Try not to cut all the way through and instead just the top layers. This will allow the edges to puff around the filling and not create a dome.
Place clean, dry spinach in the center of this inner rectangle, then add in the crumbled crispy bacon and sprinkle with the shredded cheese, thyme and salt (along with the optional maple syrup).
Also optional, spread a little of the left over bacon fat on the outer pastry not covered with filling, this will add more flavor and help the edges turn golden brown.
Bake at 400 degrees for about 15 minutes or until the pastry as really puffed and you can see a lot of the layers from the sides and it is a lovely golden color.
