Football season is HERE folks and that means more fun get-togethers with family and friends. While we have always loved entertaining, our new home has a gigantic back yard that makes having people over often compulsory. A few weekends ago, I noticed that apparently there is a neighbor who has weekly “garage band” practice…but it isn’t the kind of music you’d expect. It’s a Mariachi Band! And they are actually pretty good. So Ben and I have joked that our next party needs to be planned to coincide with practice and we’ll have to make our favorite baked shrimp nachos recipe.

While I have plenty of Mexican recipes in my repertoire, I decided to experiment with something new. Inspired by KRAFT’s Cheddar-Shrimp Nachos Recipe, I made my Fiesta Shrimp Nachos last night and they were a raving success. I’ll definitely be serving this up with my Strawberry Basil Margaritas at our Fiesta Party!

  1. Combine taco seasoning with olive oil and mix into shrimp. Marinate at least 30 minutes in refrigerator.
  2. Line cookie sheet with aluminum foil. Layer chips, cheese, garlic, red onion, sweet peppers and repeat, making sure to be generous with cheese.
  3. Bake at 350 for 15-18 minutes, or until cheese is melted throughout.
  4. Meanwhile, cook shrimp on med-high heat in a pan until cooked through (about 3 minutes each side).
  5. When cheese has melted on nachos, remove from oven and top with shrimp, tomatoes, green onions, cilantro and jalapeños.
  6. Serve immediately.
  1. If you're in a hurry, you can COVER large microwaveable plate with layers of half each of the chips, shrimp, veggies and cheese. Repeat layers. And then MICROWAVE on HIGH 1 to 2 min. or until cheese is melted, rotating plate after each minute.
