Quick and Easy Latte Recipe

Buying a home in Southern California can be a dream come true for many. Unfortunately that dream usually comes with a 40+ mile weekday commute to work in order to have an affordable mortgage. Having a nice cup of coffee in your commuter mug is an absolute essential for any Los Angelino.

Luckily, I don’t have that rough morning commute to contend with, but that doesn’t mean I don’t still need a morning pick-me-up. Working from home has it’s own set of cons, including working late nights and trying to multitask more than you can reasonably handle. Work often gets in the way of family or any hope of that elusive “free time” so every minute of time ends up being extremely valuable. One minute here and two minutes there over the course of a day can sometimes add up to an extra hour that enables you to play a family game or make a quick run to the gym.

One of my favorite ways to save a few minutes in the morning is with Instant Coffee. To mix things up, I like to make something “extra special” that doesn’t take a whole lot of extra time. I like to plan ahead for busy weeks and make this treat on a Sunday. I enjoy a cup or two right away, but make extra to keep in the fridge to use during the week. This stores perfectly for about a week when chilled, and can easily be poured over ice for a super quick two-second Iced Latte on Monday!

Folgers Easy Latte Recipe

2 scoops Folgers instant coffee crystals

¾ cup boiling water
¼ to ¾ cup coffee creamer of choice (amount depends on how light you prefer your coffee to be. For this cup, I used the full ¾ of a cup)
Optional, a tablespoon of coconut oil or butter for added froth and richness

Very carefully add boiling water to a blending pitcher. 

Pour in the instant coffee crystals, creamer and optional coconut oil or butter.

Tightly cover the top to keep the hot liquid inside and then blend on high for a few seconds until you have a perfectly creamy liquid. It should be full and frothy on top.

Pour into your favorite mug and enjoy!
