One of the things that make Kebabs so great is that they start with a simple base and they can be taken in almost any direction. At it’s most simple a Kebab is a Middle Eastern dish of pieces of meat, fish, or vegetables roasted or grilled on a skewer or spit. Most people use shrimp, chicken or beef as their meet but as you will see below you can even use salmon or tofu! Additionally, some common vegetables are potatoes, peppers, mushrooms and zuchini but don’t be afraid to get creative here! Almost any vegetable can be put on a skewer.
I’ve never considered putting apples on my kebab but this looks delicious.

Grilled Swordfish Kabobs with Vegetables by A Food Centric Life
There was this restuarant down by the lake where we live and growing up my family would go there once a month. My dad always allowed me to order the swordfish even though it was double the price on anything on the kids menu because I loved it so much. This Kebab instantly took me back to that place and I can’t wait to try it!
