Ok by now you all know my favorite better-for-you swap find – Brummel & Brown (instead of butter). I first shared it as the secret ingredient to making an absolutely amazing Caprese Toast. Because it’s made with plant-based oils, purified water, and the goodness of real yogurt, Brummel & Brown has a wonderfully creamy flavor with less fat and calories than butter. Since then, I’ve been using it in just about everything in the kitchen…it’s seriously amazing.
I even showed you how to make a Brummel & Brown Herb Compound that you’ll want to put on EVERYTHING. I was right, right? I still make a batch about once a month. It’s perfect for keeping a small amount ready to go in the fridge, and you can save the rest (if there is any!) in the freezer.

Today, we’re busting out one of my favorite brunch recipes. It’s a simple homemade waffle, but once again, by using Brummel & Brown as the secret ingredient, we get waffles that taste like heaven! Your brunch guests will be asking for your secret for sure.
Best Homemade Waffle Recipe Ever
2 cups of all purpose flour
1.5 cups of warm milk
2 eggs or flax eggs (what I used here and works perfectly every time)!
6 tablespoons of Brummel & Brown buttery spread, plus more to grease the waffle iron
3 tablespoons baking soda
¼ cup of sugar
Pinch of salt
Heat the waffle iron to medium (or your preferred setting).
If using a flax egg, make this first. (Mix 2 tablespoons of ground flax seeds (flax meal) and 5 tablespoons of warm milk then let sit for a few minutes to thicken.)
Grease each side of the waffle iron well with a little bit of the Brummel & Brown.
Combine everything together whisking only until you have the batter combined (Don’t over stir or you will get dense waffles).
Use an ice cream scoop to spoon in the batter, this will help keep things tidy and give you evenly sized waffles.
Remove when the waffles are cooked through and golden brown.
We enjoyed these with some warm Brummel and Brown spread on top along with fresh berries and pure maple syrup.
*These also freeze quite nicely!
