How to Make the Ultimate Mint Cookies and Coffee Milkshake

We’re in the middle of a heat wave and all I can think of is ice cream. Luckily, school just started back up, and the hubby is at work all day so I get to indulge in whatever I want without having to hide in the closet or the chicken coop in order to fully enjoy it.

So I decided to go all out by combining some of my favorite treats all into one amazingly delicious and easy to make coffee milkshake recipe – mint chocolate cookies and Breyers coffee ice cream.

Ultimate Mint Cookies and Coffee Milkshake Recipe

2 cups Breyers coffee ice cream
Dash of milk if needed (depends on how soft the ice cream is when getting ready to blend, if it is already on the soft side, you may not need this)
Melted milk chocolate
Mint cookies

Melt the chocolate per package instructions and then dip the top rim of the glass in the chocolate. Let cool for a minute while you crush cookies. Do this quickly though as you don’t want to wait too long!

Then dip the chocolate coated rim into the crumbled cookies. Let that harden and set while you mix up the milk shake.

Add the Breyers coffee ice cream, optional dash of milk and a few cookies to the blender. Turn on medium and blend just until everything is combined.

Pour into your glass, top with additional cookies and enjoy!

Of course I usually feel guilty and end up sharing via round two. With minor modifications, you can easily customize this recipe to your tastes. For instance Ben loves to add Irish Cream to his coffee so I added a splash to his. For our son, I switched out the Breyers Coffee Ice Cream for Breyers Vanilla instead.

Description

  • Mint cookies

Instructions

Then drip the chocolate coated rim into the crumbled cookies. Let that harden and set while you mix up the milk shake.
  2. Add the Breyers coffee ice cream, optional dash of milk and a few cookies to the blender. Turn on medium and blend just until everything is combined.
  3. Pour into your glass, top with additional cookies and enjoy!

    I love the presentation of this classic favorite. Rimming the glass was a really smart idea. I will try your recipe this weekend. My nephew will be staying with us for the weekend because my sister and her husband will be out on a business trip. I know my nephew will love this so much he won’t want to go home. :)

    Looks like a great milkshake to me, whether you choose coffee or vanilla ice cream. The chocolate and cookie crumbs rimmed glasses were a good idea.
