Bite Size Santa Pancakes Recipe
Ingredients
favorite pancake batter or frozen mini pancakes
fresh strawberries
whipped cream in a can
candy eyes
Instructions
Prepare your favorite pancake batter according to package instructions or use your favorite frozen brand of mini pancakes.
Heat a nonstick pan to medium and use either VERY little or no oil/butter at all in the pan. (This will help the surface of the pancake look less shinny and keep the whipped cream in place)
I used a 1/3 cup muffin/ice cream scooper to try to make similarly sized and shaped pancakes.
Whether you made pancakes from batter or from frozen, be sure to allow the pancakes to fully cool on a rack before continuing. This is important because if they are hot or warm when you add the whipped cream, it run and melt down all over the rest of the face/pancake.
While you wait for them to cool, wash, dry and slice the strawberries in half.
Once pancakes are cool, place one strawberry half towards the top of the pancake and add candy eyes just underneath. Carefully dab on a bit of whipped cream to make the fluffy white beard.
NOTE: The pancakes and strawberries could be made and prepped ahead of time, but plan to add the candy eyes and whipped cream right before serving.
