All of my life I’ve been a night owl. It served me well throughout most of high school and college when late-night study sessions and last-minute term papers were commonplace.
All of that came to a screeching halt when motherhood arrived. Late nights all too quickly turned into early mornings where I stumbled through the morning bottle bleary-eyed and exhausted.

One would think after seven years of parenting I would have adapted from night owl to early bird. At the very least I would have turned the corner when my oldest child started her own educational career.
But you would clearly have underestimated my steadfast inability to change.
While I may not be able to change, like a three-legged dog I find that adaptation comes easy.
These days adaptation comes in the form of copious amounts of caffeine labeled as Coffee. It’s like a membership card to the parenting club.
On our way to school in the morning, I pass by other mothers, with children in tow and mugs in hand, raising them in salute and recognition (or perhaps they’re just saying good morning but I like to think otherwise) of our card-carrying membership.
Like any coffee addict, I’ll drink coffee hot, flavored, black, mixed, or on the rocks.
I’ll drink it with sugar, with honey, with creamer, without creamer, in a car, on the plane or in a train.
I will drink it here or there, I will drink it anywhere, Sam I am.
But my latest obsession is with this Night Owl’s Hazelnut Bulletproof Iced Coffee recipe. It’s seriously so easy to make and portions of it can be made up in bulk ahead of time.
Plus, if you pick up this super cute owl mold, it’s adorable too.
Night Owl’s Hazelnut Bulletproof Iced Coffee Recipe
Ingredients
2 tablespoons instant espresso powder
1 cup hot water
¾ cup (or more as desired) coffee creamer of choice
Optional but were nice additions:
2 tablespoons pure maple syrup
1 spoonful of a chocolate hazelnut spread
Directions
Combine the hot water and espresso powder together. Make a large or a few small ice cubes out of part of the espresso liquid (I used this owl mold).
Chill the rest of the espresso drink in the fridge.
Either in the same ice tray or when the owl mold is available again, freeze some of the coffee creamer as well.
Place your favorite mug in the freezer to chill.
When everything is chilled or frozen and ready to go combine the remaining espresso and creamer, top with the frozen owl pops, drizzle with maple syrup and a spoon full of the chocolatey hazelnut goodness and enjoy!
