Taking advantage of every shortcut possible, this delicious Mini Pancake S’more Recipe really could be made even on the busiest of mornings. Because sometimes Monday’s just need to start of with a treat.

For as long as I can remember my family has spent Fourth of July and Labor Day at our cabin in the Michigan majestic upper peninsula. Nestled amongst the pines, along a road that can’t be found by GPS, sits an A-Frame cabin on a 475 acre lake. It’s one of my favorite places on earth. It’s not just because of the solitude or the way we can hear the loons early in the morning, it’s because it’s where all my siblings and cousins and I have made so many memories.

We spent our days boating on the lake, fishing off the dock and running the trails ragged with quads and dirt bikes. It’s where meals were cooked on the grill or the open fire and nights were spent gathered around the campfire roasting S’mores.

S’mores have always been one of my favorite traditions. This is the first year I’ll be missing a trip to the cabin for the Fourth of July but the taste of melted Hershey’s Milk Chocolate over gooey marshmallow between two crunchy graham crackers still takes me back. In honor of new traditions, I’ve been experimenting with this new take on the classic S’more. I took the liberty of including every shortcut possible, like using pre-made frozen mini pancakes, so this recipe really could be made even on the busiest of mornings.

  1. Heat frozen pancakes according to package instructions then place in the fridge to cool.
  2. Crumble Graham Crackers as your base.
  3. Layer Mini-Pancakes with alternating Frozen Whipped Topping and Jetpuff Marshmallows. Less is more with these as the marshmallow expands, about 1 tablespoon does it.

  1. They’re almost too cute to eat, but of course that would be absurd. I’ll eat them happily and I might even share some too. ;)

  4. Now those might just be what I need to get going in the morning. I’m not a morning person but after a few of these and some coffee, I bet I could change that.
