But let’s be real—getting your kids to eat their veggies can be a challenge, especially if they’re picky eaters. That’s why we’ve put together this delicious and healthy Mommy and Me Quinoa Bowl recipe.
It’s one of my favorite gluten free salad recipes with quinoa. Not only is it packed with nutrients, but it’s also so tasty that even the pickiest of eaters will love it!

Is quinoa gluten free?

Is quinoa keto friendly?
Unfortunately, no. While quinoa does have some health benefits, it is fairly high in carbohydrates and not suitable for a strict ketogenic diet.
Can you microwave quinoa?
Yes, absolutely! In fact, it’s one of the easiest and quickest ways to cook quinoa.
You’ll want to use a ratio of 2 to 1, water to quinoa. For the best results, make sure to rinse your quinoa thoroughly under cold running water first. Also keep in mind that 1 cup uncooked quinoa yields about 3 cups of cooked quinoa.
Add 1 cup of quinoa and 2 cups of water to a large microwave safe bowl. You can also add spices like salt or pepper to give your bowl more flavor.
Cover with a plate or a microwave cover, and cook on high for 6 minutes. Carefully remove the cover, and stir thoroughly. Recover and cook for another 4 minutes.
Let stand for about 5 minutes, covered, before fluffing with a fork.
How long does uncooked quinoa last?
Dry or uncooked quinoa usually lasts several months to several years if kept properly in a sealed container, in a cool, dark place.
Does quinoa go bad?
The short answer is that yes, quinoa can go bad. However, it takes a long time.
One clear sign your quinoa has spoiled is if you see mold. Definitely toss it out if this is the case!
Another way to tell if it has gone bad is by its smell. Fresh, nutty aromas indicate that it’s still fresh; however sour or unpleasant smells mean you might have gone rancid!
How long does quinoa salad last in the fridge?
If you’re like me, you’re always looking for ways to make healthy eating a little easier. Quinoa salad is a great option because it’s packed with nutrients and can be made ahead of time. But how long does quinoa salad last in the fridge?
The answer depends on a few factors, including how the salad is prepared and how it’s stored. Quinoa is a fairly hearty grain, so it can withstand longer periods of time in the fridge but if your salad also includes fresh fruits or vegetables, it may only last for a couple of days. And if you don’t store it properly, quinoa salad can start to spoil more quickly.
For the best results, make sure to store it in an airtight container in the fridge. With proper storage, quinoa salad can last in the fridge for about 3-5 days.
Can you freeze quinoa salad?
No, it’s probably not a good idea to freeze a prepared quinoa salad. Most of the ingredients just don’t freeze or thaw well. However, plain cooked quinoa can be frozen on its own!
Cooked quinoa will last for up to 6 months in the freezer.
How to freeze quinoa
- Let cooked quinoa cool completely.
- Place in an airtight freezer bag or container, removing as much air as possible.
- Label with the date and freeze for up to 6 months.
- When ready to use, thaw overnight in the fridge or using the defrost setting on your microwave. Fluff before serving.
How to reheat quinoa
Quinoa can easily be reheated in the microwave, stovetop, or even in a skillet.
To reheat in the microwave, place quinoa in a microwavable safe dish and heat for 1-2 minutes, checking and stirring every 30 seconds until warmed through.
For the stovetop or skillet method, add a small amount of water or broth to help keep the quinoa from drying out. Heat on low, stirring occasionally, until warmed through.
One important note: if you are reheating quinoa that has been frozen, make sure it is completely thawed before attempting to reheat.
Vegetable Quinoa Recipe with Tomatoes and Blueberries
Ingredients
4 cups of washed mixed greens for sautéing (I used baby kale, spinach and baby bok choy)
3 cups cooked quinoa (I make ours with bone broth for an extra boost of goodness)
½ avocado, ripe
fresh blueberries
cherry tomatoes
1 teaspoon of olive oil
dash of Himalayan salt and fresh pepper
Instructions
Heat the olive oil in a pan and then add the greens, cut the bok choy in half the long way. Add the salt and pepper and then sauté until just cooked.
Add about 2.5 cups of pre-cooked quinoa to an adult bowl and a half cup to a child’s bowl (adjust amounts as needed for age).
Slice the avocado in a fan and place in one section in both bowls.
Place the greens on top with the bok choy cut side up.
Sprinkle the blueberries and tomato slices in the remaining open spaces.
Enjoy right away or cover, toss in the fridge and serve chilled for a meal later that same day.
